My Quiche Recipe for Thursday

We are all at varying stages of the crud in my house, so no lunches yesterday. Ben was sick on Monday, so his lunch was still packed in the fridge and he took that on Wednesday. Faith was sick on Wednesday and didn't need a lunch. I bought one because I was too lazy to make one.

So instead, I give you my quiche recipe. :o)

1-2 cups diced ham or chicken or meat of your choice
8oz shredded cheese of your choice
2 eggs
1 cup milk
1/2 cup Bisquick or similar baking mix

Spray a muffin pan with non-stick spray.
Cover the bottom of each cup with meat, then sprinkle cheese on top of that (maybe a couple of teaspoons of each).
In a separate bowl, combine eggs, milk and baking mix till the lumps are gone, you may want to use an electric mixer here.
Pour a little of the egg mixture over the meat/cheese mixtures till the muffin cup is filled almost to the top.
Bake 400 for 20-25 minutes or until a knife inserted in the center comes out clean.

This also works with a regular pie pan for a whole quiche, but up the baking time to about 40-45 minutes.

The current batch I have are smoked chicken and various cheeses since I was trying to use out some already opened cheese. Personally I wanted chicken & gouda but we had no gouda. Ham & swiss is really yummy and a favorite of my kids too.

  2. I've made "impossible" pies before (where you put the crust on top and it just kinda sinks down), but I've never thought to try them in a muffin tin. What a great idea for lunch, or even for halfing a recipe for making a smaller amount than you'd get from a whole pie pan. Thanks!

  4. I have to try these both for myself/family and to take on scout camping trips.


    I have a bad habit of under eating on these - leaving me fatigued and ravenous for several days afterward - this kind of cooking might do the trick!

    And I am planning on using some of my bento boxes to help manage what I bring for meals etc!
