Simple Snacks for Taekwondo

It's nothing terribly exciting, but the kids still needed to eat after martial arts.

I had a pot of lentil soup simmering, so they each took a thermos of fresh soup with them.



To that, we added a slice of homemade banana-zucchini bread that we also made on Monday, and some freshly sliced cantaloupe and honeydew. I added a couple of picks for at least a little cuteness. :o)

Someone asked about the lentil soup. I kind of make it up as I go along, but the gist of it is:

Bring a kettle of water to a boil, add 1 cup lentils, some diced onion and a heaping spoonful of minced garlic.
Let it boil for a bit, then add--diced tomatoes, diced zucchini, peas, carrots, green beans, basically any veggies you want.
Add a couple of teaspoons of soup bouillon to taste, then let the whole thing simmer for a few hours, stirring occasionally.
