Mini Quiche Bites Bento

I was in the mood for quiche today, so decided to make a batch of mini-quiche bites for bentos. This way, I got my quiche and I got a few things to toss in my freezer stash of bento food. It's a win-win scenario.

I used my typical quiche recipe but with mini-muffin tins instead of regular size muffin tins. I made half with turkey & swiss and the others with ham & cheddar. One note about mini-muffin tin quiches--watch them carefully, they cook much much quicker than regular ones.



Faith had a couple of mini quiches, topped with cheddar flowers, some celery & carrot sticks, cucumber flowers, peach slices, a strawberry, and a mini muffin bite. While the oven was already on, I made the kids some mini-muffins too.

  4. I am trying to cook more & more in muffin-style, since they make such great portion control, plus a good fit for the lunchbox.

    Can I assume you have a separate freezer? I'm having trouble finding room in our refridge-top freezer to store much of anything..

  7. @Cindy, we do have a separate freezer. When we bought our first house, the lady left the freezer b/c it was an old one and she was worried it would break if moved. We lived there 5 years and it worked perfectly the whole time, but we left it for the next owners too. My husband worked for a homebuilder, so we used their vendor to get a full size GE freezer for the new house, I couldn't be without it now! The whole door is lined with frozen soups, jams, etc, and I do some freezer cooking (pot pies, casseroles, etc) for my convenience.

    @Jessica, they eat these cold as well. We taste test at home to see if they are OK cold, then go from there. The year Faith was in first grade, I was teaching 4th at her school. My class was coming back from recess just as hers was going to lunch, so I would warm things up for her quickly. Other than that, it's all cold.
