The Kids Cook Monday - More Muffins, and Soup



This week, our The Kids Cook Monday project kind of coincided with Muffin Tin Monday. We made mix & match mini muffins using a large variety of different fillers.

So in that vein, I really don't have a whole different post, so I'm recycling a favorite from last summer, which was one of the first meals F&B made on their own with minimal help from Mommy--meatball minestrone.

Ben adding spices to the soup, I think I need a better spice blend than what comes in the packet, time to experiment!

Ben stirring while Faith adds the veggies, we use a lot of frozen peas & carrots, but no reason why you couldn't throw in others.

Simmering soup, which is always a good thing, we do eat a lot of soup around here!

F&B's Meatball Minestrone (as adjusted from a Pampered Chef Kids' Cookbook):
1 package of beef flavored ramen noodles with seasoning (this is where I need to experiment)
1 jar of spaghetti sauce, 14 oz, our favorite is Ragu Traditional, and no, I don't make my own
3 cups water
2 cups or more frozen veggies
About 1 lb of meatballs, precooked (frozen is fine or make your own, but not raw ground beef)

Bring the water to a boil and add spaghetti sauce and seasoning packet from the noodles.
Bring back to a boil and add the noodles (broken into small bits), the veggies and the meatballs.
Once it boils again, lower the heat and simmer for a bit until noodles are cooked and the veggies are soft.

  1. They look so serious but happy in the same time in the kitchen ... So adorable! It's great to let our kids experience the cooking process. My kids love to help in the kitchen but not the cleaning part hehehe :)
