The Kids Cook Monday - Pumpkin Spice Cake


Fall seems to have arrived in Dallas and just in time for The Kids Cook Monday. Fall means pumpkin time and I really wanted a pumpkin dessert!

After browsing though a bunch of recipes, we finally settled on a simple pumpkin cake. It uses a package mix as a base, so it was nice & easy for cooking with the kids. It also smelled amazing while it was baking and we've kind of eaten half of it already.


Pumpkin Spice Cake
1 box yellow cake mix
4 eggs
1/2 cup oil
1/4 cup water
1 can pumpkin puree (not pumpkin pie mix)
2 tsp cinnamon (maybe a little more, I added a bit extra)
1/2 cup sugar

Mix together the dry ingredients, then using a hand mixer, beat in the oil, water & eggs.
Add pumpkin puree and beat until smooth.
Pour into a greased/sprayed 9x13 pan and bake for 40 minutes at 350 degrees.
Top with cream cheese icing and sprinkles!


I bet nuts would go really well in this or as a topper, but F&B hate nuts, so that's a no-go around here.
