Muffin Tin Monday - Now with fresh tortillas
Faith mentioned the other day that we haven't had Muffin Tin Monday in awhile, so I planned on doing one today. Now, in my head, I had all sorts of grandiose ideas, but I went to Kroger this morning. And they had fresh butter tortillas, right off the baking machine. And the very nice tortilla lady gave me a sample, which means I came home with a fresh bag of butter tortillas.
Needless to say, lunch plans got scrapped so we could use some of these wonderful fresh tortillas. I still did put it in a muffin tin!
Faith had cheese quesadillas, a combo of monterey jack and sharp cheddar, along with a boiled egg and some pretzels. The bottom row has fresh cantaloupe, strawberry yogurt with sprinkles and some fresh strawberries.

Yum! I've only ever had mass-produced tortillas... except at California Adventure, but they were still not awesome. But I love the sound of anything with "fresh" and "butter" in the name!

ReplyDeleteI would love to know how to make them fresh, I've never tried. Many of the groceries here make them on site, so if you time it right, you have a warm bag of tortillas to take home. F&B loves the one Kroger where the lady takes them right off the rotating griddle and wraps them up in paper for them to taste test. :o)

ReplyDeleteI've never made tortillas, but I have made other flat breads, and they were waaaay easier than I thought they would be.
