I had a few ideas for lunch today, but F&B made it quite easy on me, wondering if we had any more spaghetti cupcakes. We did, although these ones had meat sauce "icing" instead of a meatball, because I had leftover meat sauce when I made them. Same recipe though, I just spooned a good teaspoon or two of sauce on top of each before baking. Oh, and this time, we had leftover whole grain pasta, hence the color of the noodles!
So both kids had two of the spaghetti cupcakes, the last of the carrots and cucumber, some apples, some strawberries, and some blueberry-pomegranate crisps; simple, yummy, and minimal work for me!
