Hormel February - Potato Lover's Month


February is Idaho Potato Lovers Month!

Besides a tasty side dish, baked potatoes can be a yummy and easy dinner.  It's often one of our favorite choices for a quick weeknight meal.  (You can either place potatoes in a crockpot for day long baking or pierce them with a fork and nuke them to bake, both plans cut down on the prep time.)

Besides bacon, of course, one of our favorite baked potato options in "Taco Stuffed Baked Potatoes."  These are easy to make and can be on the table in less than a half hour, assuming the chef crockpots or nukes the potatoes.

To make, sauté and drain ground beef, then add Chi-Chi's Fiesta Taco Seasoning mix & water (per package directions).  Finish cooking and set aside.

In the meantime, slice open the potatoes and chop up some of the insides, leaving the skin intact.

Top each potato with a generous scoop of taco seasoned beef, a dab of sour cream, and a sprinkle of cheese.

Serve with diced onions and tomatoes, Chi-Chi's Thick & Chunky Salsa, and Wholly Guacamole guac!
Quick, easy and very yummy.  Plus, it's an F&B favorite!
