Breakfast Granola Bites for #AllGoodApril


Carrington Farms challenged a group of bloggers to try out their products for #AllGoodApril, and see what they could create.  With yummy coconut oil and flax seed arriving at the house, I knew we couldn't back down.

With a little help from Mr. Ben, we created Granola Cran-Cherry Breakfast Bites.  They were original going to be cookies, then muffins, then I gave up figuring out a shape, so we are calling them "Bites".  Either way?  They are really really good!  We've sampled them as bites and then crumbled some into our yogurt too.


Ben's Granola Cran-Cherry Breakfast Bites
1 3/4 cup rolled oats
1/2 cup flour
1/4 cup brown sugar
1/2 tsp baking soda
1/2 tsp cinnamon
2 Tbsp ground flaxseed
3/4 cup dried cran-cherries
1/2 tsp vanilla
1/2 cup honey
1/3 cup coconut oil

Mix all the dry ingredient together first, then add vanilla, honey and coconut oil.  If mix does not seem sticky enough, add additional honey by the teaspoon.


Blend together well, then pack into an ice cream scoop and transfer to muffin cups.  You do want to pack this firmly so it sets in the oven.

Bake at 325 degrees for 18-20 minutes.  Press down on the top again when bringing them out of the oven to help them keep their shape.  Cool before serving.


We were really happy with how these turned out, so we're excited to try a few other varieties, changing out the cran-cherries for other fruits and nuts!
