Peeps Peeps and More Peeps!

It just wouldn't be Easter without a few Peeps!

The kids and I are getting set for our favorite Easter dessert, Peeps cupcakes!

Each year, we make a batch of these to share with friends and each year, the experiment gets more and more creative.

What is a Peeps cupcake?  Well, it started out as a simple cupcake with a Peep on top, but we've taken to adding coconut grass, jelly bean eggs, and a Peep for a true Easter basket look.  One of these years, I'm going to figure out a way to make a basket handle for these, maybe chocolate?

I can't wait to experiment a little more with a few new recipes, along with our standard Peeps cupcakes.  Maybe my own Peeps pops?  Chocolate drizzled Peeps?  S'mores Peeps?  Rice Krispy Peeps?
