Leftovers to Lunches Bento - Easter Turkey Salad & Boiled Eggs

With the plethora of Easter leftovers the other week, our lunches have been a little less creative and a lot more "let's use this up".  This lunch was no exception.  I had plenty of boiled eggs left, along with enough turkey to feed the army, so that got turned into turkey salad.  Thankfully, both kids like eggs and turkey salad!


Ben took a turkey salad pocket sandwich since I had pita bread in the freezer.  I decorated it with some adorable kawaii food picks my Secret Santa sent me.  In between the two halves, I tucked a Nature's Valley Greek yogurt/strawberry bar.  To the right, he has a sliced boiled egg (with another cute pick) and cantaloupe chunks (and another pick so I had one of each).  Not pictured, he took yogurt and another granola bar for snacks.

For the turkey salad, I simply chopped the turkey extra fine in my mini food processor and added mayo to taste.  We haven't had a simple turkey or chicken salad in awhile, so I didn't add much to to this one, per request.

Lunch is packed in our Easy Lunchboxes and accompanied by a Lunchbox Love note!
