Easy Breakfast Casserole and Eggland's Best Eggs CEO Contest


What is your favorite egg dish?  I asked the kids to help me figure out ours and we ran the gamut from quiches, to egg salad sandwiches, to egg in a hole, and more.  They could not not pick just one idea!

March is National Nutrition Month and, with that in mind, Eggland’s Best is launching their next “Chief Egg Officer” (CEO) contest in search for someone passionate about EB eggs and the nutritional benefits they bring to the table!


There are many ways to incorporate EB eggs into your meals, and Eggland’s Best would like the next “CEO” to show us how EB eggs are the only eggs to use! Compared to ordinary eggs, EB eggs have four times more vitamin D, double the omega-3s, and ten times more vitamin E – they’re not just your average egg!

From March 3rd to May 24th, you can visit the Eggland’s Best website to complete a submission form on why you would make a great “Chief Egg Officer.” One Grand Prize winner will receive $5,000 cash, a year supply of Eggland’s Best eggs, and a special nutrition consultation with Nutrition Twins, Tammy Lakatos Shames and Lyssie Lakatos.


Ben and I had to make a recipe too, so he helped me make an easy breakfast casserole!  It's a great way to help your kids get started in the kitchen and it's rather tasty too.  I've made it for years, but I actually measured today since it's kind of a dump & cook style recipe.  You can add other meats, different cheese, veggies, pretty much whatever you'd like to it!

Ben's Easy Breakfast Casserole:
6 Eggland's Best eggs
6-8oz diced ham
2-3 cups of frozen hash browns (the thin strips)
1 cup of shredded cheese
1 cup of milk


Spray the bottom of a square pan with baking spray.
Spread a layer of hash browns at the bottom.
Add a layer of diced ham on top of the hash browns and sprinkle with the cheese.
In a small bowl, beat the eggs and milk together and pour over the ham & cheese layer.
Bake at 375 degrees for about 1 hour or until the eggs have set.
