Buffalo Chicken Mac #CookingUpHolidays


With all the holiday cooking and baking, I love easy go-to recipes for lunches and dinners.  My oven is usually tied up with cookies, so I can't spare it for a two hour dinner right now.  I can, however, spare it for a few minutes for this yummy Buffalo Chicken Mac recipe from Kraft!    I've actually bookmarked the link to go back to the other recipes too.  We really want to try the Creamy Turkey & Noodles, the Bacon-Wrapped Chicken Bites, and the Zippy Turkey Pot Pie.


With leftover cooked chicken (or a few chicken breasts overnight in the crockpot, my secret tip for when I need chopped or shredded chicken) and KRAFT Deluxe Macaroni & Cheese Dinner, I only had to borrow the oven for about 10 minutes to finish cooking it.  Even better, the kids and the husband loved it, so it's not just going to be a holiday recipe around here.


Since I knew I wanted to try out the Buffalo Chicken Mac, the kids and I picked up a few of the ingredients at Walmart, then raided our own freezer for the chicken.  As mentioned, if you don't have leftover chicken to use, just toss a couple of chicken breasts in your crockpot (I use my mini-one), cover them with water, then cook on low overnight.  In the morning, you'll have perfect chicken all ready for your recipe.


Here's what you'll need:

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1-1/2 cups chopped cooked chicken breasts
1 Tbsp. Buffalo wing sauce
1/2 cup KRAFT Shredded Cheddar Cheese
1 Tbsp. chopped green onions

Directions:

Preheat your oven to 425 degrees.


Make your macaroni and cheese per the package directions, set aside.


Pour the wing sauce over your chicken.


Mix well, until all the chicken is coated.


Combine chicken with macaroni and cheese.


Spoon into a 1.5 quart casserole dish, coated with baking spray; top with shredded cheese.


Bake at 425 degrees for 5-10 minutes, until cheese is melted.


Garnish with onions and serve!

We loved it, the whole pan was pretty much gone for lunch between the four of us, and I did have to promise to make it again.
