Busy Holiday Meal Ideas #StouffersHoliday

Can I wave the white flag yet?  I love, love, love Christmas, but I am definitely exhausted lately!  This week alone, we've had three holiday parties, two gift exchanges, cookies to bake, shopping to do, presents to wrap, and more (plus all that laundry to do from vacation because taking a vacation the first week of December was not my most brilliant idea ever).  Not to mention, we've still got all the rest of the household stuff to do, the kids have activities, and they expect dinner every night!



We stopped into Walmart and picked up some of the STOUFFER’S® Family Size Entreés.  The Lasagna with Meat Sauce is a favorite at our house and having a few in the freezer gives me an option for those really busy nights.  It's also on Rollback at Walmart right now, so why not pick up a few extras to have on hand?  I also love that it's easy enough to make that I can call my 13 year old and have her get it in the oven for me while I'm out and about.


I keep salad fixings in the fridge, so it's easy to throw together a quick tossed salad, but we simply must have bread of some with our lasagna.  The kids' favorite are garlic-cheddar biscuits, so that is always their request.  These are extra easy to make, only 3 ingredients for the actual biscuits plus butter and seasonings, and they can go right in the oven while the lasagna is finishing cooking.  I keep the recipe posted on my fridge since the kids can make them too.


Garlic Cheddar Biscuits
1 cup baking mix
1/2 cheddar cheese, shredded
1/3 cup milk
---
2 tbsp butter, melted
1 tsp garlic powder
1 tsp Italian seasoning

Preheat your oven to 400 (or if you've got the lasagna cooking, 375 works too)
In a bowl, mix together cheddar cheese and baking mix.
Slowly stir in the milk till a very sticky dough forms.
Drop spoonfuls of dough on a parchment-covered cookie sheet to make biscuits (I usually get 8)
Bake for 10-12 minutes at 400, or 12-14 minutes at 375.


In the meantime, combine melted butter, garlic powder, and Italian seasoning.
Take the biscuits out of the oven and brush the tops of each with the butter mixture.
Place back in the oven for a minute to finish cooking.
Serve with lasagna!
