Summer Dinners - What's on Your Plate?

Maybe, just maybe, it's summer in the PNW.  Or at least I'm pretending it's summer!  Back home in Texas, it would probably be one hundred billionty degrees in the shade with the sun beating down all day long.  And maybe, here in the PNW, the husband and I are debating if we need to turn the heat back on because we are cold in the house, but I'm still dreaming of summer!

Nothing says summer like fresh flavors like mango and pineapple and relaxing on the patio with chips and salsa and hanging out with friends!  I love relaxing summer dinners outside and I've been craving some great summer meals lately.



What are your go-to summer foods?

Our favorite is salsa chicken or salsa pork, especially when paired with fruity salsa like La Victoria Mango Habanero Salsa!

Just place boneless skinless chicken breast or boneless pork loin in your slow cooker.
Top with one can cream of chicken soup, one packet of taco seasoning, and one half cup of La Victoria Mango Habanero Salsa.
Cook on slow all day long, then shred with forks about a half hour before serving.
Mix a half cup of sour cream into the shredded meat and cook the last half hour.
Serve in hard or soft tortillas or tortilla bowls, along with cheese, sour cream, lettuce, etc.
Don't forget more salsa and fresh mango!
