Pancake Day, Pancake Night!

February is National Hot Breakfast Month and since it's also Pancake Tuesday, we're feeling the need to send it out with a bang!  Krusteaz sent us a great package to help and the kids picked blueberry pancakes.

Weeknight dinners can be crazy busy and we've learned, over time, that breakfast for dinner is one way to take away a bit of the stress.

And, if you play your cards right, you can make enough leftovers to freeze for hot breakfasts!  I love having my own premade waffles and pancakes in the freezer that can be popped in the toaster oven for a quick meal.  Pair them up with some sort of yummy sausage (our favorite, by far, is maple sausage) and you've got the perfect breakfast or dinner!

Krusteaz also sent us some other yummy ideas to try--great twists on the breakfast anytime idea!
  • These Cookies & Cream Waffles are a decadent treat that will please the entire family during Hot Breakfast Month! They are fluffy, have a slightly crisp exterior, and are loaded with chocolate sandwich cookie pieces.
  • Looking for both a savory and sweet side dish for your Breakfast Night spread? This Blueberry Cornbread recipe calls for fresh blueberries and Krusteaz Honey Cornbread Mix. Pro tip: coat the blueberries in flour before adding them to the batter so they don’t sink!
  • These Strawberry Baked Donuts are dunked in a cream cheese glaze and are the perfect way to enjoy Breakfast Night. All the fun of a donut, but made with the ease of a pancake mix!
  • If you have a sweet tooth and are a fan of theme park treats, Churro Waffles are exactly what you need to make for Breakfast Night. Top them with ice cream and caramel for an extra tasty twist.

Are you craving breakfast yet?  I can help!

Krusteaz gave me a second prize pack of yummy breakfast mixes (Belgian Waffles, Buttermilk Pancakes, and Blueberry Pancakes) plus Blueberry Muffins and Cinnamon Crumb Cake, along with some other fun goodies to give to one lucky winner!  Just use the Rafflecopter below to enter, leaving me a comment telling me what your favorite breakfast night idea is.  For more entries, you can tweet about the giveaway too.
