An Old Favorite - Egg Salad Pocket Bento

Egg salad has long been a kid favorite around here, but I haven't had much luck finding the mini pita breads I used to buy years ago.  I decided that one potential option would be to make it on regular pita breads and Faith immediately claimed the idea for her lunch.


In this lunch, we have one egg salad pita pocket, cut in half for easier eating, and decorated with bunny picks because bunnies are cute.  Our version of egg salad is nothing special--I boil eggs in the InstantPot, slice them twice with an egg slicer, mix in mayo, and stuff into the pita pockets.

To the right, I added cantaloupe chunks with a giraffe pick (also cute) and pretzels grids.  I realized after taking the picture that the lunch looked a bit sparse, so a cheese stick and granola bar were added to the mix.  Lunch is packed in one of our Easy Lunchboxes.
