Kid-Made Breakfasts with Nellie's Free Range Eggs

The boy is on a cooking kick lately and I'm definitely enjoying it.

His current favorite?  Making omelets for breakfast for all of us! I'm loving it too, because who doesn't enjoy a hot omelet that you don't have to make yourself?


This summer, we are partnering with Nellie’s Free Range Eggs for Ben's cooking concoctions.  Nellie's wants parents and kids to get into the kitchen and prepare delicious egg-centric recipes during its own “Nellie’s Summer School” this June.


Summer is the perfect time to get kids cooking and breakfast is a great meal to start with. Easy to prepare, inexpensive and nutrient dense, eggs are one of the most versatile and nutritious meal or snack options around. Plus, they’re a great first food to get kids into the kitchen and interested in cooking at an early age.

Ben's Perfect Mini Omelet:
1 Nellie's Free Range Egg
1 tablespoon milk
Pinch of salt and pepper
2 tablespoon sharp cheddar cheese, plus more for garnish
Butter


Heat your mini pan at a medium heat and melt a big pat of butter.
In a separate bowl, beat the egg, milk, and cheese until smooth.
Pour egg mixture into the frying pan.
Simmer until the bottom is set, using a rubber spatula to lift the edge and let remaining egg liquids run underneath.
Carefully flip the omelet over and cook the bottom.
Sprinkle with cheese, fold, and serve!

  1. I love throwing lots of stuff together to make a filling and healthy meal. I use broccoli, mushrooms, sweet potato, sometimes some sausage and scrambled it all up with a couple of eggs. Migas is a family favorite too!
