Instant Pot Buffalo-Style Meatballs

A few weeks ago, we were looking for a slightly different idea for dinner when I saw a recipe for Buffalo meatballs.

Since it's summer, I definitely knew I didn't want to turn the oven on and I also really didn't want to make meatballs from scratch.  I always have frozen meatballs on hand, so with a few tweaks, I was able to have Buffalo meatballs on the table within the hour!


Because this recipe uses frozen meatballs, the sauce seems to glaze the outside of the meatball, versus really absorbing into it.  Both kids liked it so much better this way and it allowed us to not have to use the mildest wing sauce.

Want to make them?  It's easy!  I forgot to take a pictures during the process, but I promise you, there is so little work that you won't even miss the pictures of mixing together sauces!

Ingredients:
Frozen meatballs, about 30
1/2 cup Buffalo wing sauce, your favorite spice level
1/2 packet of powdered ranch dressing
1/3 cup water (hot works better)

Directions:
In a small bowl, mix together Buffalo sauce and ranch dressing, set aside.
Spray the inner crock of your pressure cooker with bake spray and place the meatballs directly on the bottom.
Mix the water into the buffalo-ranch mixture to thin it out and pour directly over the meatballs.
Lock the lid of your pot, turn the vent back to seal.
Set your Instant Pot timer for 10 minutes, manual setting.
When it is done, quick release the pot.
Use a slotted spoon to gently toss the meatballs in the sauce.

Serve with a sprinkle of shredded mozzarella and/or ranch dressing for dipping.
