Matching Monday, and Saturday Night's Muffin Mania

Because I have nothing better to do on a Saturday night, I opted to bake for lunches. My yield in the end:


1 dozen ham & cheese mini quiches, 1 dozen chicken & veggie stuffed muffins, 1 dozen corndog muffins, and 2 dozen blueberry mini-muffins

All of this is safely ensconced in my freezer for various lunch emergencies. My Sunday goal was to make a batch of polenta, some quinoa salad and apple bars, but Faith lovingly gave me her stomach bug, so cooking was not a plan.

Being that I was rather incapacitated, Monday was the first go round of "use the new freezer stash" and each kid got the same lunch because, well, they were lucky I got out of bed long enough to make them *a* lunch. ;o)



They each had a corndog muffin, carrot sticks, cheese cubes, grapes, a blueberry mini-muffin and a few panda cookies.

This is why I like a freezer stash. Just pack quickly and go!

  3. I did some baking last night, and plan on doing some more today. I made Morning Glory Muffins (with carrots, pears, apple butter, raisins... etc - modified slightly from Allrecipes). I love the idea of savory muffins, and I'll have to give it a try.

  4. I'm new to bento and love checking in with your blog. I love baking mini muffins if only my picky offspring would eat any of it! There is another great muffin recipe abc apple, banana, carrot that is healthy and sneaks a veggie in. Also oddly enough I'm a Texan by marriage and now currently living in Canada for dear hubby's work!   7. I worked at a muffin only bakery in the 80's, and they too had savory muffins like: Broccoli and cheddar, pepperoni pizza, chicken pot pie, and ham and cheese. They went over well with our famous Minestrone and white clam chowder. Bravo to you for this wonderful idea!!!
