I've had a recipe I've been wanting to try for quite awhile for "chick"en nuggets using chickpeas in lieu of chicken. Apparently, chickpeas are a good source of protein. These nuggets combined chickpeas, shredded carrot, Italian seasoned bread crumbs and some creamy Italian dressy. I baked them, served them with a bit of dipping sauces, and hoped for the best. According to Ben, these were "the best chicken nuggets ever1" I'm personally not sure of that but they were pretty good.
Today's bento contains 4 of the "chick"en nuggets, along with a side container of dipping sauce. We used ranch for now, I'd like to try them with my roasted red pepper dip. The nuggets are topped with little cheese chickens, of course, and held in place with a few cubes of marble cheese and some celery sticks. The side containers have freshly sliced honeydew, still frozen blackberries, and a homemade strawberry fruit roll-up (pure strawberries mixed with organic applesauce and a splash of vanilla).

Sounds yummy! Have to try those. And the chicks are adorable!
