The Kids Cook Monday - Cheesecake Time!

We've been on a bit of a cheesecake kick lately. It's yummy, not overly sweet, and makes a nice summer dessert. This week, for The Kids Cook Monday, F&B and I made a nice simple cheesecake that lends itself well to any kind of topping. This time, we added a nice dollop of whipped cream and some fresh sliced strawberries.

It's a perfect dessert recipe for kids, minimal ingredients and prep work.

To make:
2 bars of cream cheese, softened
3/4 cup sugar
2 eggs
1 tsp vanilla
Vanilla wafers for "crust"

Mix all ingredients together till blended well.
Line cupcake pan with muffin papers, then place 1 vanilla wafer at the bottom of each.
Fill each cup about 1/2 full of batter.
Bake at 350 for 18-20 minutes.
Chill, top and serve!
