Because the kids wanted egg salad and I wanted to do make-ahead meals, today had to be egg salad day. I know I can make a sandwich the evening before and it's OK for lunch, but I did not want to find out what egg salad in the fridge for several days was like. Today, both kids had egg salad on whole wheat sandwich thins, topped with some puzzle piece cheeses, along with cantaloupe and carrots. Not pictures, they had Annie's Cheddar Bunnies and strawberry-banana Chobani yogurt tubes as snacks.
I made the sandwiches and cheese cutouts last night, along with adding the carrots and cantaloupe to the box. As usual, I had the fruit already diced up, and I had made the egg salad on Saturday for me, so made enough to use some during the week. Morning prep was only snacks and water bottles. For make-ahead bentos, I've found Easy Lunchboxes are the best choice. The fruit is separate from the main meal, and they stack well in my fridge!

ReplyDeleteIn my experience you can keep egg salad for a day or two if it's properly stored (airtight container in the fridge) but I'd probably have done the same! The play does sound intense, I hope it's a great experience.

ReplyDeleteYou could always do a "make your own" egg salad lunch. Just put the egg salad in a small container and put the bread in along side it. Our daughter likes pita chips, pretzel chips, or crackers, instead of bread.
ReplyDeleteIt works well with pizza too. Think...pizza lunchables. Just put all the elements in muffin cups or sealed containers.
We love doing that too! Another favorite is sliced croissants with egg salad in a muffin cup. :) And we love pizza lunchables too!
