The husband was on 24 hour duty last week and asked for a hot lunch if I had a chance to bring it. I figured it was a great idea for the blog and a great way to use out our leftovers.
I had quite a bit of pulled pork BBQ left, so that was the perfect base for the meal. We always make it in the crockpot with a Hormel Always Tender pork loin in the original (non-marinade) flavor. Add a half bottle of BBQ sauce over top of it and leave it on low all day long. Shred with a fork, toss with a little more BBQ sauce if needed and serve on buns.
Since we were out of buns by this point, I opted for a BBQ pulled pork wrap with the leftover pork, some shredded cheese and sliced onions. I also had leftover potato wedges, so heated up those as well, and baked some caramel apple cookies, so those went into his container as well.
I had whole fruits (apples and mini-oranges) so just tossed those in the bag for him. The container is a Hefty Meal Portion Pan that I picked up at the commissary in a two-pack awhile back.
