I think the leftovers to lunches idea might be one of my favorite blog ideas. It makes for a nice break from sandwiches and lets me use up what we have in the fridge! F&B like the changes too, it's just something a little different than a standard lunch.
In this lunch, I used out some Buffalo Chicken Bites I had made for dinner a few nights previously. While we had them with a cold pasta salad, I just packed them alone, with a side of ranch to dip them in since that is the kids' favorite. Personally, I come down on the bleu cheese side of dipping sauces, but the kids prefer ranch. Since we had finished the pasta salad at dinner, I added some cucumbers to dip in the ranch, along with cantaloupe and a mini orange. I also added a Gogurt for a bit of a treat! Lunch is packed in our Easy Lunchboxes.
