Freezer Cooking Weekend


If you follow this blog on Facebook, you got a sneak peek of what I'm doing this weekend--restocking the freezer!

Our Washington move is over and, despite not being fully unpacked, I've also taken to task restocking the freezer.  We hit a few grocery stores for necessities where I lucked out and found bone-in chicken breasts for a very good deal.  At that price, we can take the bones out after cooking, and my freezer cooking policy is based on whatever meat is on sale.

So what's in the freezer today?  It's not all that fancy, but at least it's all ready to go!

For the crockpot:
Hawaiian bbq chicken - can of pineapple (mostly drained) plus bbq sauce
Salsa chicken - 1 cup salsa, packet of taco seasoning, can of cream of chicken soup
Honey garlic chicken - 3 Tbsp garlic, 1/4 cup honey, 2/3 cup ketchup, 1/3 cup soy sauce
Lemon pepper chicken - 1/2 cup oil, 1/2 cup lemon juice, 1 Tbsp black pepper
Chicken parisienne - 1/2 cup white grape juice (or wine), 1 can cream of mushroom soup, 1/4 cup flour, 1 cup sour cream, sliced mushrooms

For all of the above, combine ingredients in a bowl, place chicken in freezer bags, top with sauces and freeze!

After I made the first 5 meals, I realized that I should probably make more since the chicken was on sale, so back to the store I went!  Round two involves more premade marinades and spice packets since new grocery stores mean new brands to try out.

For the oven/crockpot:
Sesame ginger chicken
Citrus herb chicken
Applewood BBQ chicken
Creamy garlic butter chicken - this one needs potatoes added to the baking dish
Garlic & herb chicken
