Taco Bar Buffet


While I was looking for dinner ideas a few weeks ago, the husband mentioned we hadn't had tacos in awhile.  I realized he was right, so we planned for a taco night.  But when I was looking in the freezer, I discovered a couple of packages from Hormel I forgot I had gotten, so instead of taco night, we did a full scale taco bar!


Since there are four of us, and three of the four of us (not me) don't mind leftovers, I opted for three varieties of tacos--beef, chicken and pork.  I started with a single packet of the new Hormel Taco Meats, shredded and seasoned beef, warmed up in a skillet for one round of tacos.

I knew we wanted vegetables to go with dinner, so for meat number two, I made fajita chicken with peppers and onions.  I ordered a ton of meat awhile back, so those were already preseasoned and frozen, no secret recipes.


And, since there are 4 of us, there was no reason not to make my favorite too.  I love the Lloyd's Pulled Pork, so I put a package of that in a casserole dish with some extra barbecue sauce.

We cooked all three, added hard and soft taco shells, cheese, salsa, guacamole, and sour cream, along with some other veggies and chips, and everyone made the tacos of their choice.

And, despite all that food?  We really didn't have much leftover!
