Holiday Snacking with #WinCoCheer


Yes, it's that time of year again!

Now that Thanksgiving is over, it's full-on Christmas in Washington for our family.  (And Christmas in Washington doesn't seem to be much different than Christmas in Colorado or Texas, except for the weather.)  But since we're busy this weekend, I had to make some holiday snacks to tide us over while we are decorating.

I do love yummy snacks, and I also like easy snacks, especially with the kids.  I headed off to Winco (my current favorite Washington grocery store) to pick up the essentials--Rice Chex, Corn Chex, and some other goodies from the bulk bins to make a perfect holiday Chex mix.  But since I didn't want plain Chex mix and I did want it sweet, I added a secret ingredient--cherry gelatin!  You can actually swap cherry for strawberry or raspberry if you like those better, or for a whole different color gelatin, but my personal favorite is cherry!


Cherry Christmas Chex Mix
4.5 cups Rice Chex
4.5 cups Corn Chex
2 cups white chocolate chips
1 packet cherry gelatin powder
1.5 cups powdered sugar
1 cup holiday colored chocolate candies
1 cup holiday colored jelly beans

Pour Chex into a large bowl with a lid and set aside.
Slowly microwave the chocolate chips in 30-45 second increments, stirring each time, until melted.  (It takes me between 2 and 2.5 minutes.)
Pour the melted chocolate chips over the Chex mixture and stir gently to coat.
Mix powdered sugar and cherry gelatin in a separate bowl, then add to the Chex mixture.
Seal your bowl and shake well until coated.
Lay out wax paper and spread out the mixture to harden.
After harden, place your mixture back in the bowl, add chocolate candies and jelly beans, mix well and serve!


Now once the Chex mix was done, I needed cookies.  Cookies, of course, are an integral part of the holiday baking season, so I decided to make a quick batch of crinkle cookies. Again, Winco didn't fail me and I picked up Betty Crocker Devil's Food Cake mix and whipped topping.  I already had the basics like eggs and powdered sugar at home.  Crinkle cookies are so easy to make, just 4 ingredients, with one being the cake mix and they look really pretty when they are done.  They also are a nice, chewy, almost brownie like cookie, so they are perfect with a cup of tea.  (If you don't want chocolate, swap out the Devil's Food Cake mix for Betty Crocker Super Moist Yellow Cake Mix.)


Devil's Food Cake Crinkle Cookies
1 package Betty Crocker Super Moist Devil's Food Cake mix
2 cups frozen whipped topping, thawed
1 egg
1 cup powdered sugar

In a bowl, beat the egg and whipped topping together.
Stir in cake mix until a dough forms.
Place the powdered sugar in a separate bowl.
Scoop small balls of dough and drop into powdered sugar, roll with your fingers gently to coat the dough with powdered sugar.
Place on a parchment covered cookie sheet, spacing the dough balls out.
Bake for 10 minutes at 350 degrees.
