Is Breakfast Night a tradition in your house?
We love a quick breakfast for dinner night, especially on busy weeknights. Ben especially loves cooking breakfast foods, since he's able to make a lot of them on his own.
This week, in honor of February being National Hot Breakfast Month, he made us Chicken & Waffles, with a little help from Krusteaz. We use a lot of Krusteaz baking mixes to help make our breakfasts (and dinners) run a bit smoother, and they sent us a great package to help us celebrate National Hot Breakfast Month.
Chicken & Waffles is a typical southern dish, with fried chicken topping breakfast style waffles, served with butter and syrup. I know, it sounds odd, but it's really quite good.
Since time was of the essence, we took a shortcut with frozen chicken strips to make the meal quicker. You can, if you wish, bread and fry chicken, which would normally be my choice, since I prefer chicken strips or cutlets to bone-in chicken. That said, a good quality frozen, breaded chicken can really make things a lot quicker and I keep a pack in the freezer for emergencies!
Since Ben was cooking, he mixed up a bowl of Krusteaz Belgian Waffle Mix and made the waffles while the chicken strips were baking. We love the quality of the mix and the yummy fluffy waffles we get from it, not to mention how easy it is for Ben to make them on his own. It's another pantry staple for cooking with kids!
For serving, he opted for quarter waffles with single pieces of chicken on top, so he could get a second batch of waffles cooking while we ate the first one. Very good and I'm impressed with his newfound cooking skills.

ReplyDeleteMy favorite breakfast food to have for dinner is egg burritos. Pancakes are relatively simple to make, so we eat those for breakfast, but egg burritos require more prep than I am willing to undertake in the morning.
