Citrus Chicken Stir Fry #NewComfortFood



When the husband and I were first together, we didn't eat at home much.  We both worked and I was in grad school, so we ate an awful lot of meals out.  My mom would always email me recipes that she thought looked interesting and easy to cook in a shorter time frame, and occasionally, I'd make a few of them.


Fast forward 20 years, 2 kids, and a food blog, and eating at home is pretty standard.  I usually cook a mix of new and old recipes (hello Pinterest and other food blogs), but one of those old recipes my mom emailed is now a family favorite--Citrus Chicken Stir Fry. It's definitely a new comfort food for my husband, and was one of his requested meals when he got home from his last deployment.  He was just away for a 6 week Army training class, so I added it to our menu plan for his return.


Thinly sliced chicken is sauteed in a tangy citrus sauce, then quickly stir fried with assorted veggies and served over a bed of rice.  The possibilities are endless, switching out varieties of vegetables for different flavors changes up the whole meal.

What You Need:
1 lb Foster Farms Simply Raised fresh chicken, boneless skinless chicken breast
12 oz frozen mixed veggies *or* about 5-6 cups fresh diced vegetables
1 cup orange juice
1/2 cup extra virgin olive oil
2 Tbsp soy sauce
1 package Italian salad dressing mix


How to Make:
Slice your Foster Farms Simply Raised fresh chicken, boneless skinless chicken breast into thin slices.
Mix together your olive oil, orange juice, soy sauce, and Italian salad dressing mix.  Shake or stir very well.
Spoon a teaspoon or two of your mixture into the bottom of a wok and turn to medium heat.
Add in your chicken and stir fry it till cooked through.
Add in the rest of your sauce and your vegetables.
Saute until veggies are cooked through, but still crisp.
Serve over freshly steamed rice.
