Leftovers to Lunches Meatball Subs

I still loves the option of leftovers to lunches, especially when feeding a very hungry teen boy.

Depending on what we have for dinner, I sometimes hide the leftovers, just because I know it's needed for a lunch later in the week.  That is how I was able to make two meatball sub sandwiches.


My kids have a microwave available at school, so they love sandwiches they can warm up.  I don't put sauce or gravy on the bread, however, they heat it up in a separate container, then pour it over.

In this lunch, the boy took two meatball subs, which I used two leftover hot dog buns for.  Sadly, the bread ripped a little, but I was assured that it was still tasty.  These were actually meatballs in brown gravy, so I sent a small container of gravy to add after the lunch was heated (not pictured, because gravy does not photograph well).

Above the sandwiches, I added a granola bar, and that airtight container of gravy.  To the right, I added pretzels and grapes.  I'm sure there was other food sent loose, but I don't remember what it was.  I assume yogurt, cookies, things like that.  Lunch is packed in a Goodbyn Hero box.
