Home charcuterie lends itself quite well to making up a few lunches too. I always look after the holidays for those gift baskets that are holiday themed, buy them, disassemble them, then the food is perfectly fine for us for a different meal.
Today's adult lunchable features:
Potato salad (1/3 cup, 160 cal.)
Smoked summer sausage (2 oz., 180 cal. )
Blueberries (1/2 cup, 41 cal.)
Cucumber salad with shredded carrots and a splash of Italian dressing (1/2 cup, 40 calories)
Total calories for the box are approximately 421 cal.
For costs, the summer sausage is the hardest to estimate. I purchased some super cute Hickory Farms baskets after the holidays for something like 75% off because it was too good a deal to pass up for random charcuterie nights. The sausage (and cheese and mustards) happened to come along with the baskets. I would be shocked if the sausage cost $0.50 at most. But let's call it that since I no longer have a clue what I paid for this sausage and rest assured that I'm very happy with that purchase. The potato salad is around $0.70 because it was on sale so I could finally buy the favorite one. The blueberries I've estimated at about $0.50 and the cucumber at about $0.25. Total cost for this lunch is about $1.95.
This box is an EasyLunchboxes Snack Box once again, on Amazon for about $12 for a 4-pack. While they are not watertight, the potato salad does just fine in them, especially with adults who aren't swinging lunch bags around in circles.
