Wrapping up the end of the week, so wanting to use some of the food that's opened and needing to be eaten. I'm liking the lunch prep right now because I'm super aware of what is in our fridge at any given point in time.

Boiled egg with some pepper (1 egg, 78 cal.)
Cucumber salad with shredded carrots and a splash of Italian dressing (1/4 cup, 40 calories)

Total calories for the box are approximately 349 cal.
For costs, the cheese was about $1 because I really really wanted the cheese. The ham was approximately $0.65 for the portion and the egg was about $0.15. I've been estimating the cucumber salad at about $0.30, which includes the sprinkling of carrots and the splash of dressing. Total box cost would be about $2.10 because of the need for a fancy cheese.
This box is an EasyLunchboxes Snack Box yet again. They are available on Amazon for $12 for a 4-pack and work nicely for the multiple items with sauces and dressings. As cute as some of my other boxes might be, nothing beats convenience.
