Smoked Chicken Adult Lunchable

The weather cooperated, so we decided to smoke chicken breast for lunches.  I got a 3-pack of new seasonings to try and share (review coming soon), so we smoked 5 chicken breasts for lunches and to make fettuccine with later this week.


Today's adult lunchable features:

Chunks of gruyère cheese (2 oz., 200 cal.)

Smoked chicken breast (2.5 oz., 98 cal.)

Pineapple chunks (1/2 cup, 40 cal.)

Cucumbers with ranch dressing (1/3 cup + ranch, 60 cal.)

Total calories for the box are approximately 398 cal.

I buy chicken breast when it's on sale for $1.99/lb and freeze it.  That makes it about 12.5 cents per ounce, or $0.38 for the 3 ounces I used here. The cheese was around $1 for the 2 ounces, because we prefer to sample all the fun cheeses at the deli.  Add to that $0.28 for the pineapple and at most $0.25 for the cucumber, and we're at about $1.91 for the box!

This box is an EasyLunchboxes Snack Box once again. They are available on Amazon for $12 for a 4-pack and I actually just ordered a second set of these because my husband is home.  Four boxes for two people isn't going to be enough, so I ordered him his own set.  Granted, his are definitely "snack" boxes since it's not enough food, but preplanned snacks are good too.
