The husband is back to work after our vacation, so I spent some time yesterday prepping some meals and snacks for us. His preference is the two protein, two fruit for snacks, so that's what he is getting.
This week, I boiled eggs, defrosted some deli meats from the freezer, and cut up all the fruit. Fruit on sale this week was strawberries, oranges, and watermelon, but the watermelon is a bit messy for his meals.
Deli chicken slices (2oz., 50 cal.)
Strawberries (1/2 cup, 25 cal.)
Boiled egg (1 egg, 78 cal.)
Cutie orange (1 orange, 40 cal.)
Total calories for the box are approximately 193 calories.
Not pictured, I added a string cheese to each box, so add 70 cal. for that, bringing us up to 263 cal.
For costs, the chicken was on sale a few weeks ago, so I picked up several packs and froze it. That ran around $0.70 per serving. The strawberries are around $0.45, and $0.15 for the egg. The oranges are around $0.27 each. Total cost for this lunch is $1.57. Add the string cheese at $0.33 (Kroger brand) and we're up to $1.90.
Once again, for comparison, our grocery has:
$5 - chicken salad, grapes, cheese, flatbread, whole box weighed 5.52 oz
$4.59 - apples, boiled egg, cheeses, cranberries and almonds, whole box weighed 7.35 oz.
$4.59 - apples, cheese, turkey pepperoni bites, cranberries, whole box weighed 6.75 oz.
I spent approximately $7.60 to make all four of these boxes combined, including the add-on cheese.
