A New Idea for Today's Adult Lunchable

I'll let you in on a little secret.  I'm super obsessed with Trader Joe's.  The only thing that saves me from spending entirely too much money there is the fact that it's not that close to my house.  But when I make that trip?  I'm spending plenty.

Today's lunch is totally inspired by the super yummy balsamic rosemary chicken I bought there. I love the flavor of it, but it wasn't going to work with the recipe I was needed chicken for because of the balsamic.  New solution?  A super amazing chicken salad.

Today's adult lunchable features:

Chicken salad (3 oz., 190 cal.)

Extra thin bread triangles (6 triangles, 60 calories)

Cucumber slices (1/2 cup, 10 cal.)

Strawberries (1/2 cup, 25 cal.)

------------------

Total calories for the box are approximately 285 cal.

For total costs, two slices of bread would be $0.15 because I used one and a half slices. The chicken salad, I'm guessing about $1.50 for the chicken and let's add another $0.10 for the mayo.  I could make the chicken but this one is a favorite and I never get the balsamic blend quite right.  The strawberries are around $0.45. I've been estimating the cucumber about $0.25.  Total box cost would be about $2.45.

This box is an EasyLunchboxes Snack Box once again, on Amazon for about $12 for a 4-pack.  The little elephant fork pick is to help scoop the chicken salad onto the bread.  You can find it here as part of these animal fork picks on Amazon for about $5.
