Feeding My Husband - One More Husband Lunch

One more day at the office yesterday, so I went ahead and sent him lunch. We had church last night and Shaun is helping with Ben's class. I wanted to schedule meals to make sure everyone had dinner before church, which meant eating lunch early enough that everyone was hungry for dinner.

You'll have to excuse the picture, I forgot to take one, so Shaun took one on his iPhone for me at the office with florescent lighting. The food looked a lot more appetizing at home!

Easy Lunchboxes Salad

He had a chef salad with boiled eggs, cheese & ham, plus whatever veggies I had on hand (lettuce, cucumber, carrots, tomatoes, orange peppers, something else maybe?). The upper left holds honeydew, cantaloupe & cucumber, the lower left is a chocolate zucchini muffin. I also sent some of the leftover fried chicken in a separate microwavable container. For a morning coffee break, he had grapes and a piece of zucchini bar. Lunch is packed in our EasyLunchboxes, snack was in a sandwich box container of Ben's.

  1. How do you keep your fruit fresh? Do you use "fruit fresh" or do you squeeze lemon juice on the fruit when you pack the night before?

  2. I don't typically pack fruit that browns. Honeydew/cantaloupe/pineapple doesn't as long as you keep it in a sealed container. I dice mine when I bring it home and it sits in sealed containers in the fridge so everyone can help themselves to it.
