Matching Monday, and Saturday Night's Muffin Mania

Because I have nothing better to do on a Saturday night, I opted to bake for lunches. My yield in the end:

1 dozen ham & cheese mini quiches, 1 dozen chicken & veggie stuffed muffins, 1 dozen corndog muffins, and 2 dozen blueberry mini-muffins

All of this is safely ensconced in my freezer for various lunch emergencies. My Sunday goal was to make a batch of polenta, some quinoa salad and apple bars, but Faith lovingly gave me her stomach bug, so cooking was not a plan.

Being that I was rather incapacitated, Monday was the first go round of "use the new freezer stash" and each kid got the same lunch because, well, they were lucky I got out of bed long enough to make them *a* lunch. ;o)

They each had a corndog muffin, carrot sticks, cheese cubes, grapes, a blueberry mini-muffin and a few panda cookies.

This is why I like a freezer stash. Just pack quickly and go!

My Very First Blog Giveaway!!!

I've been wanting to do this for awhile, so while I was in Canada, I picked up a few cute little boxes for blog giveaways!

Up for grabs is a brand new Dora bento box. It has a raspberry box with a removable divider and a sky blue lid with Dora & Boots on it that snaps on similar to a tupperware lid. Yours will be new in a plastic wrapper, I used ours to take pictures. :o)

Absolutely Identical Wednesday!

We've had a couple of weird weeks. Again, the kids only have one day of school this week which is driving me up the wall. I really like the two days of school thing and I still have to work, so it's a matter of finding out what to do with them while I am off.

We've been trying to finish off our freezer stash of foods so this is the very end of it. My goal this weekend is to make at least a batch of quiche, a batch of stuffed muffins and a bath of some kind of mini-muffins. Possibly a batch of bourek too, if I still have phyllo dough.

For Wednesday, the kids had completely identical lunches. They had the last two quiches (chicken & cheese), some pretzels, a few koala cookies, canteloupe and grapes.
For those who asked, I buy the koala cookies and panda cookies at the oriental grocery. They are kind of shell cookies with a cream inside.

Then, the powers that be added a photo club thingie to allow users to showcase photos in topics. The community manager created a bento one since bentos are so visual, then turned it over to me too, so it's another fun place to visit:

Just thought I'd share, since Wednesday was pizza & pajama day at Ben's school and pizza day at our school too, so no one had bentos. And on Thursdays, since we're home, the kids got lunch on a plate. ;o)

Monday Morning Lunches

Forgot where I put the camera all week, so just getting around to posting these!

F&B took matching lunches this week, I had enough for both of them and it makes it soooooo much easier on me not to make separate lunches. The cupcakes are quite the good find on my part. I bought them when the stores clearance them because they had "seasonal" sprinkles for $1.20 for 12 of them. They immediately went into the freezer where they are available for quick lunch treats!

The kids had pasta salad from Sunday night's dinner with cheese stars (Ben) and cheese hearts (Faith), a mini chocolate cupcake, grapes, and a banana (not pictured). We're trying to make a point of using up all leftovers so as not to waste food, hence the lack of variety while we finished the end of the grapes/bananas.

I was good, I did not buy any as we do not need them. It took a lot of willpower on my part not to buy them, but I didn't.

Someone else should though, they are really cute!!!!

Ben's Back to School Wednesday

And we are back!

We flew home Monday night and the kids started back at school on Wednesday. Faith has hot lunch (as she ofte does on Wednesdays) so Ben got to pick what he wanted.

He chose a macarni pasta salad with ham, grapes, koala cookies and (not pictured) vanilla yogurt in a "train" container. :o)

Reposting my quiche recipe (on request)

My mini-quiche recipe:

1-2 cups diced ham or chicken or meat of your choice
8oz shredded cheese of your choice
2 eggs1 cup milk
1/2 cup Bisquick or similar baking mix

Spray a muffin pan with non-stick spray.
Cover the bottom of each cup with meat, then sprinkle cheese on top of that (maybe a couple of teaspoons of each).
In a separate bowl, combine eggs, milk and baking mix till the lumps are gone, you may want to use an electric mixer here.
Pour a little of the egg mixture over the meat/cheese mixtures till the muffin cup is filled almost to the top.
Bake 400 for 20-25 minutes or until a knife inserted in the center comes out clean.

This also works with a regular pie pan for a whole quiche, but up the baking time to about 40-45 minutes.

The smoked chicken/cheese ones are from my freezer stash--diced cooked chicken and I think monterey jack cheese? I can't remember anymore what cheese, I also love gouda with chicken.

If you use a muffin pan, it yields close to 12 quiches, so I freeze them. When they are frozen, I take them out the night before, put them in the bentos in the fridge and they are defrosted by lunch the next day.
