Afternoon Snack Bento

Sometimes, after multiple lunches, F&B still need afternoon snacks.

Side note: Swimming=awesome to tire out your kids, but sheer h*ll on your grocery bill



Today's afternoon snack features ham and cheese kebabs on top of some whole grain naan, carrots, and strawberries. And yogurt, in a separate bowl, but that's not exciting enough to photograph.

Muffin Tin Monday - After Swim Foods




After swim team, F&B must immediately come home and eat. After all, they are so hungry. Actually, they start asking to eat the minute they get out of the pool, but I need to drive home and make food first.



Today, Ben had rollled up ham, multigrain naan and marble cheese chunks, along with strawberries, blueberries, peach yogurt and raspberries with butterscotch chips inside. (Aren't the raspberries cute? I saw the idea on Pinterest, but with white chocolate chips. I only had butterscotch handy, but same concept!) He ate everything and was back an hour later for Lunch #2.

Multiple Muffin Bento

F&B wanted a picnic today after swim team and since I wanted them outside, it seemed like a good idea. I decided on a fresh batch of corn dog muffins for them, since I had all the ingredients handy and maybe 1 whole batch will last for more than one meal. Maybe? (Swim team means they are hungry all the time! It also means they are tired at night. This is a good thing.)



So for his little picnic lunch, Ben had a corn dog muffin, a sweet potato muffin/cupcake with a bit of cream cheese icing, blackberries, and some leftover rice/chicken/peas that makes a pretty good cold salad.

And then they each came back in for muffin #2.

And then they had muffin #3.

And there are no blackberries left. Or any more of the rice/chicken thing.

God help me when they are teenagers.

Sushi Sandwich Kebab Bento

I was making sushi sandwich rolls today (ham, cheese, chive cream cheese and butter torillas). Since the tortillas weren't quite rolling as nicely as I would have liked, it was kebab sticks to the rescue!

These kebab sticks are actually drink stirrers from the dollar store. They did have a ball at the other end from the flower, but a good sharp pair of scissors fixed that! I actually trimmed them to fit these boxes perfectly.


Ben has two kebab sticks of the sushi sandwiches, along with blackberries, strawberries, carrot sticks, and a sweet potato cupcake with cream cheese icing & sprinkles.

I kind of wish the kebabs wrapped up a little better, they are a bit messy looking. Ben scarfed them down without complaint though!

The Kids Cook Monday - Cheesecake Time!


We've been on a bit of a cheesecake kick lately. It's yummy, not overly sweet, and makes a nice summer dessert. This week, for The Kids Cook Monday, F&B and I made a nice simple cheesecake that lends itself well to any kind of topping. This time, we added a nice dollop of whipped cream and some fresh sliced strawberries.



It's a perfect dessert recipe for kids, minimal ingredients and prep work.

To make:
2 bars of cream cheese, softened
3/4 cup sugar
2 eggs
1 tsp vanilla
Vanilla wafers for "crust"

Mix all ingredients together till blended well.
Line cupcake pan with muffin papers, then place 1 vanilla wafer at the bottom of each.
Fill each cup about 1/2 full of batter.
Bake at 350 for 18-20 minutes.
Chill, top and serve!

Muffin Tin Monday - Breakfast Style




We have swim team this morning. We actually have swim team every weekday morning and I need to shower. And wash my hair. And generally get up and presentable for the day. And making breakfast is low on my agenda. So it's time for more muffin tin breakfasts! Take your tray out of the fridge, eat your food, put your tray in the sink, and don't interrupt Mommy while she's in the shower. Seems like a game plan to me!

Today, F&B have blackberries, strawberries, peach yogurt, boiled eggs, and blueberry banana bread, along with orange juice. That should hold them for an hour or so! Swim team makes them even more hungry than normal.

Featured Friday

This has been an idea I've been toying around with for awhile. I see awesome blogs, posts, recipes, ideas, all the time and want to share them, but I need a venue for it. I'm already addicted to Pinterest, but I haven't figured out how (or if) to have that feed to this site.

A Cheese Course Bento

I've been telling F&B that one of my favorite parts of Europe is the addition of a cheese course to the dinner menu.

Of all the yummy possible ideas in the world, extra cheese, after dinner, might just win. And that includes dessert.

So today, in honor of this amazing idea, we made a cheese course style bento.


Ben had fresh garlic naan, along with sharp orange cheddar, dill white cheddar, and smoked gouda. I need a few more cheese options to really have a good cheese course, but this will do for now. To go with that, he has strawberries, blackberries and an almond poppyseed muffin.

I may regret introducing them to the cheese course concept. They ate the smoked gouda I bought for me.

The Most Random Bento Ever

Have you ever had one of those meals that is completely random, nothing goes together, it's just kind of a melange of everything in the fridge?

Well, this is the bento version of that meal.



Faith picked it, so I complied. She has two cheesy zucchini squares (they are also good cold), sliced boiled egg, blackberries, a piece of blueberry banana bread, strawberries, and maple glazed carrots (these are also good cold).

I don't know, I'm not asking, I just make the lunches around here!

The Kids Cook Monday - Baking with Fruits & Veggies


This week, for The Kids Cook Monday, we're actually bringing back two of our favorite recipes, from the posts I did last year on healthiER desserts (they are still dessert, don't get me wrong, they just have more redeeming qualities than a typical dessert), along with a favorite side dish recipe.

I had some things in my fridge and pantry that had to be used out, so we cooked quite a bit today, along with making Faith's favorite dinner of all time.

For dinner, we enjoyed Cheesy Zucchini Squares (I had 2 zucchinis that absolutely had to be used):



For tomorrow's breakfast, I made a loaf of Blueberry-Banana Bread:



And for treats this week, we now have a dozen Sweet Potato Cupcakes with cream cheese icing (I also had sweet potatoes that needed to be cooked):



As usual, all recipes have been made by me and F&B approved. We have an interesting idea for strawberries, so I will share soon that if it works in practice as it does in my head!

After Swim Bento

F&B are signed up for swim team this summer, so not only are they normally starving children, now they are extra starving children after using up all that energy in the pool. They also still have taekwondo in the afternoons, so you may notice that my general plan is to keep them exhausted all summer long.



But since swimming takes a lot out of you, we are looking for higher protein ideas (no PB please). Ben has a boiled egg with whole grain crackers, Greek yogurt (blueberry, of course), strawberries and cantaloupe, and homemade chocolate-zucchini muffins. We're out of cheese or I would have added a bit of that too.

Another Take on a Carebear Bento

Faith requested a Carebear bento again, so I was happy to oblige. I haven't attempted one of them since this post (which interestingly enough was on my anniversary last year, but figured I would give it another try.

I like this one a little better, I think I prefer no smile since the face area on this cutter isn't well defined.



Either way, she has a turkey & cheese sandwich on whole grain sandwich rounds, a few veggie straws, cantaloupe, blueberries and strawberries. We just bought a ton of fresh fruit, so the kids are busy eating us out of house & home again.

The Kids Cook Monday - Crockpot Cooking with Faith


Since it is already in the triple digits in Dallas, this week's edition of The Kids Cook Monday involves copious use of my crockpot so we don't have to turn on the oven.



It also involves the use of child labor to cut up all the vegetables. But you know, if they want to eat, there is no reason they can't help fix it too!

A new favorite crockpot meal of ours is roast chicken, which is what Faith's fixing the veggies for in the above picture. It's simple really--roasted potatoes, carrots and chicken, all in one pot with seasonings.

To make:
Cube potatoes and dice carrots and layer on the bottom of the crockpot (this is Faith's job).
In the meantime, rinse the chicken, pat it dry, and remove any inner icky things and dispose of those.
Quarter an onion and place that inside the cavity of the chicken. Child will protest this part and you will have to stick your hand up inside a chicken.
Once the veggies are done, set the chicken on top of them, and sprinkle with a fair amount of your favorite poultry seasoning blends.
Cook on low for 8-10 hours.

There is something extra lovely about coming home and having dinner completely ready to go, including having leftovers.

We repurposed these chicken leftovers into shredded BBQ chicken to top stuffed baked potatoes later in the week.

Muffin Tin Monday - Rainbow Fruit & Veggies Snack




We haven't had a muffin tin meal in awhile, but yesterday was a good day for a muffin tin snack. I did realize that I need to buy some new muffin tins. I suppose when you only pay $1 per tin, you do get what you pay for. They are a little beat up looking already, so I'm in the market for new ones.



Today was a rainbow themed fruit and veggie snack. We have red strawberries, orange cantaloupe, yellow applesauce, green cucumbers, blue blueberries, and since I had no brilliant idea for purple, we skipped over to brown for hummus (and extra carrots).

I do have a pineapple to slice, but I'm being a bit lazy right now.

Inside Out Sandwich Kebab Bento

OK, that was a bit of a long title!

Trying something today, to see if I could make it work--inside out sandwiches! Bread on the inside, meat and cheese on the outside, sounds delightfully quirky in a way that F&B would enjoy. The kebabs came into play when I realized that there needed to be some way to hold it all together!



Faith has inside-out kebabs with honey grain bread on the inside, then cheese, then turkey wrapped around it, secured on monkey picks. To the right, she has cantaloupe, carrots & cucumbers, and a pink lemonade cupcake that we made the other night for her church party. They are so good and quite cute, if I do say so myself.
